Congolese Maobme - Michel Kuma

INGREDIENTS: for 4 people

  • 2 tsp chopped fresh ginger root
  • 3 cloves garlic, finely diced
  • ½ green sweet pepper, in pieces
  • ½ red sweet pepper, in pieces
  • 1 tbsp tomato paste
  • ¼ tsp ground red pepper flakes
  • ½ cup soy sauce
  • ½ cup meat stock
  • 4 tbsp peanut butter
  • 800 g boneless pork tenderloin, cut into strips
  • 2 tbsp peanut oil for frying
  • 1 onion, chopped
  • 2 plantains
  • oil
  • lettuce, as a garnish

PREPARATION

Mix the ginger, garlic, red chilli flakes, soy sauce, stock and peanut butter in a bowl. Heat some oil in a large stew pot and fry the onion and pepper. Add the meat and fry until golden brown on all sides. Stir in the mixture of spices, stock, peanut butter and soy sauce you made in Step 1. Simmer, covered, for 15 minutes. Stir in the tomato paste and simmer for another 15 minutes. Meanwhile, fry the plantains in a little oil. Serve the stew with the plantains. Garnish with a leaf of lettuce.
