Pork with sauerkraut - Hristov Biser
Preparation time:
1 hour and 20 minutes
Ingredients (for 4 people):
- 400 g sauerkraut
- 300-400 g pork
- 150 g bacon
- 1 tbsp paprika
- 2 tbsp oil
- 6 peppercorns
- 3 bay leaves
- 2 sprigs fresh thyme
- 1 knob butter
Preparation:
1. Drain the sauerkraut. Slice the meat into 2.5 cm cubes.
2. Heat some butter in a casserole pot and fry the meat for 5 minutes until brown all around. Add the diced bacon and fry for a few more minutes.
3. Add the cabbage, bay leaf, thyme, peppercorns and paprika. Cover with the lid and simmer on low heat for 40-50 minutes. Stir frequently and add extra liquid if needed. Season to taste with salt and pepper.
4. Serve the pork stew with a baguette or mashed potatoes.
